L'Esprit de Sauvignon reflects modern day Languedoc at its best. Before the widespread introduction of temperature controlled fermentation here in the 1980s, crisp whites like L'Esprit were rare. Then 'Flying Winemakers' began appearing in Europe (mainly from the New World and travelling north after harvesting in the southern hemisphere was over) and showing what great results could be achieved by cool vinification in pristine stainless steel.
