Located in the easternmost stretches of the Loire Valley, Pouilly-Fumé boasts chalky, flinty soils and a cool (but sunny) climate. These factors combine to create irresistibly racy, mineral edged Sauvignons ' the speciality of Domaine Yves Pabiot.
This delicious, single estate cuvée is from an award winning fifth generation family domaine. The grapes are sent to François Poirer, winemaker at the village cellar, who carefully vinifies this intense, elegant Pouilly. Partially fermented in expensive French oak barriques from the local Bertranges forest, this lovely wine shows all the classic complexity fans of Pouilly-Fumé look for ' lemon curd and herbaceous notes edged with a distinctive gun-flint note. 2014 has proved to be a top vintage despite a cool summer ' in the end it was one that truly put a smile on the growers' faces. In Pouilly, this elegant white would be served with Crottin de Chavignol, the local goat's cheese. Or enjoy with shellfish dishes or grilled white fish.
