Since David Hohnen launched his show-stopping Cloudy Bay Sauvignon internationally in the 1980s, wine drinkers have been in awe of its dazzling style. Cloudy Bay remains the 'standard-bearer of Marlborough wineries' (Penguin Good Australian Wine Guide) and today it's justifiably famous for several other wine styles, too, including this world-class sparkler.Pelorus is made from Chardonnay and Pinot Noir (as is Champagne), grown in the Wairau Valley area of Marlborough, and part of the blend was fermented and aged in oak for added richness. Its deliciously toasty, creamy complexity makes it a great glass on its own and an excellent partner for fine seafood. Try grilled prawns with garlic, ginger and chilli, or seared scallops.
