Bill Knuttel is a big fan of white Burgundy and it shows in this luxurious white from Russian River Valley , the top spot in California'spremium Sonoma County for Chardonnay. A temperate climate , sunny days and cool nights , helps produce intense, ripe fruit with excellent structure and refreshing citrus like acidity to enable them to develop with age. Throughout the winemaking process Bill does everything to maximise quality, from handpicking the grapes to ageing the wine for a generous 13 months in fine French oak. To enjoy at its best serve gently chilled in large bowled glasses to allow the aromas to billow out. It makes a gorgeous partner for fish and white meat dishes such as salmon with hollandaise sauce or forest truffle chicken.
