Whenever he'sabsent from Le Chai, you know exactly where you,ll find him , on the rugged slopes of the Roussillon. Maury is the finest area for grapes , its slate terroir and gnarled old vines, buffeted by the wind and scorched by the sun, produce yields of around 8 hectolitres per hectare.Grenache with a touch of Syrah and Carignan, the wine'sbeen aged for over a year in French oak at Le Chai.
