This crisp, minerally white Burgundy was made by medal winning winemaking brothers Eric, Emmanuel and Hervé Dampt at their family cellar in the district of Tonnerre, just outside Chablis. Their father founded the domaine, buying his first plot of vines in 1980. The wine is named after a colourful local character Charles Geneviève Louis d'Eon de Beaumont, who in the 18th century became famous for his cross dressing - initially in his role as a diplomat, while conducting secret negotiations with the Russian Empress Elizabeth, and later as a matter of personal preference.This wine is just starting to show some mature complexity. Serve gently chilled with sauced white meats, crab, fish or gougères, a cheesy interpretation of profiteroles!
