Christian Collovray and Jean-Luc Terrier bought an estate in Burgundy's Pouilly Fuissé in 1986, since when they have won much praise. Then they did the same in the Pyrenees, lured by top grapes at great prices. And wowed us with this crisp white.
Brought up in beautiful Mâconnais, Christian Collovray and Jean-Luc Terrier are childhood friends and now brothers in law, too. In 1986 they bought an estate there and impressed the world'scritics and consumers with their superb wines. In 1997 they did the same in the Haute Vallée de l,Aude, one of the Languedoc'sbest regions. The terroir makes for a fresh Chardonnay while the Burgundian expertise of the fourth generation winemakers ensures elegance and finesse. The elevation of the vineyard (530 metres) is key. The grapes are bathed in sunshine by day, yet it'schilly at night, which helps to preserve Chardonnay'sfresh, stone fruit character. This fine citrus and peach white is ideal with salmon en croûte, creamy chicken or on its own.
